The easiest way would be to create a new color scheme. To do this you first need to browse to OS SHP Builder's directory and then open the \cscheme\Custom folder. Then copy any of the existing color schemes in that folder, reneme it to whatever and then open it with a text editor (notepad, wordpad, etc.). Now enter a new name for it, change the author if you like and then edit the lines under [Data]. The number before the = represents the original color and the number after it indacates the color index which it changes into.
After you've finished and saved the color scheme, you can select it in OS SHP Builder under Colour Schemes > Custom Schemes.

There's also another way, that doesn't require new color schemes.
1. Open Replace Color in SHP Builder
2. Click on Replacement Options: 24 Bit Colour Effects
3. Set appropriate RGB values to 255 (like, if you ever want to leave pure reds unchanged, set G and B to 255, and leave R as it is)
4. Accept, and now change white into whatever color you want.

Uhm... you guys complicate it.

There's already Color Schemes -> Custom Schemes -> General -> Binarize: if color was 0, it'll be 0 otherwise it'll be 255.

Then just replace color 255 with 1 and you're done.
